If you wish to refresh your knowledge, go back to the roots, or if you are looking for a good foundation on the fundamentals of French pastry, this class is for you! It is filled with the Classics that have been around for generations.
Puff pastry, Pâte à choux, sugar dough, savory pie dough, biscuit joconde, biscuit cuillère (also known as Lady Fingers). Crème pâtissière, butter cream, Ganache, mousseline, meringue. Opera cake, Chocolate eclair, Paris Brest, Tarts, Quiche, Mille-feuille, and more.
